From Matthew: ayyyyyyy, here's another lovely Ethiopia coffee from this current harvest! This is our first Honey processed Ethiopia - likely even our first Honey processed coffee ever, if I'm remembering correctly. In this particular case, honey process entails leaving a layer of the coffee cherry intact around the coffee seeds as they are dried, meticulously, at the Buncho washing station. We found this lot to be black tea in extreme. Not a ton of bright acids in this coffee, but the intrigue here has shifted to its seasonally appropriate Spooky Juice nature.
